When people think of a steakhouse in Southampton, they picture the same thing we do: a proper cut of beef, kissed by flame, resting on the plate while the aroma does half the talking. At Diego's Rotisserie we have been firing up our charcoal grill on Bedford Place since 2007, and while our piri piri chicken gets plenty of the glory, our steaks are cooked with exactly the same care and the same live-fire tradition.
So consider this your friendly guide to eating a great steak in the city, what to look for in a cut, how char-grilling changes everything, and how to build a meal around it.
Why charcoal makes the difference
The secret to a memorable steak is not just the beef. It is the heat.
We cook over real charcoal, and that matters more than you might think. A charcoal grill runs hotter than a standard kitchen pan or a gas hob, which means the surface of the steak sears quickly and locks in the juices. That fierce initial heat is what gives you the caramelised crust, the smoky edge and the deep savoury flavour that you simply cannot fake.
There is also the flavour that only live fire brings. As the fat renders and drips, it kisses the coals and sends flavour back up into the meat. That is the taste people chase and rarely find at home.
Key takeaway: A truly great steak is about the fire as much as the cut. Charcoal grilling gives you the crust, the smoke and the juicy centre that define a proper steakhouse experience.
Choosing your cut
Not all steaks are the same, and the right one for you depends on what you enjoy. Here is how we think about the classics.
For flavour lovers
If you want the most beefy, full-bodied taste, look for cuts with a good marbling of fat running through them. That fat melts as it cooks and bastes the meat from the inside, keeping it rich and tender. These cuts reward a slightly longer time on the grill and stand up beautifully to the smokiness of charcoal.
For tenderness
If a soft, melt-in-the-mouth texture is what you are after, leaner and more delicate cuts are the way to go. They cook faster and are best enjoyed a touch pinker in the middle, so the natural tenderness shines.
For the middle ground
Plenty of people want a bit of everything: good flavour, decent tenderness and a satisfying size. There is a happy medium for exactly that, and it is often the crowd-pleaser at the table when a group cannot quite agree.
Whatever your preference, our full range is on the menu, and our team is always happy to point you toward the cut that suits your mood.
How you like it cooked
This is where a good steakhouse earns its stripes. Getting the doneness right is a craft, and it is one we take seriously.
As a rough guide:
- Rare: cool red centre, seared outside. For those who love the pure taste of the beef.
- Medium rare: warm pink centre, a little more firmness. A favourite for good reason.
- Medium: mostly pink fading to brown, juicy but firmer.
- Well done: cooked through, no pink. We will happily do it, though a leaner cut can dry out, so a fattier one holds up better.
Our advice? If you are unsure, medium rare to medium is the sweet spot for most cuts, giving you juiciness without any nerves about the centre.
The sides and sauces that finish the job
A steak rarely stands alone, and the extras are half the fun. Think crisp chips, fresh salad, grilled vegetables or rice to round out the plate.
And then there is the piri piri. We are a Portuguese grill at heart, so if you fancy something a little different from the usual pepper sauce, a brush of our house piri piri brings warmth and a citrusy kick that works surprisingly well with charred beef. If you are curious about where that flavour comes from, we wrote all about it in our post on what makes real piri piri chicken.
Prefer something classic? A garlic butter or a peppery sauce keeps things traditional. There is no wrong answer here.
More than just steak
One of the joys of eating with us is that a steakhouse night out does not have to mean everyone orders the same thing. That is where we differ from a strict steak-only spot.
Around the table you might have one person tucking into a steak, another going for our 24-hour marinated piri piri chicken, someone else on a rack of ribs, and a couple sharing wings and a handmade burger. Everyone gets what they love, cooked over the same charcoal, and nobody has to compromise.
It makes us a natural choice for mixed groups, families and friends who all want something slightly different. Add a few cocktails and you have the makings of a proper evening.
Making a night of it
A great steak deserves a relaxed, unhurried setting, and Bedford Place is right in the heart of the city, easy to reach whether you are heading out before a show, catching up with friends or celebrating something special.
If you are booking for a group, it is worth planning ahead so we can look after you properly. We have space for gatherings and can talk you through the options for larger tables and parties over on our events page. From birthdays to team dinners, a shared feast of steak, chicken, ribs and wings is a genuinely fun way to eat together.
A few tips for the best experience
- Book ahead, especially at weekends, so you get the table and time you want.
- Tell us your doneness clearly when you order, and do ask our team for guidance.
- Let the steak rest for a moment when it arrives; that pause keeps it juicy.
- Mix your order across the table so everyone tries a little of everything.
Come and see for yourself
A steakhouse should feel warm, generous and full of the smell of good things cooking over fire. That is what we have been about for years, and whether you come for the steak, the piri piri chicken or a bit of both, we would love to feed you.
